Guide

A plant similar to scorzonera. The edible part is the cone-shaped storage roots, which are 15-20 cm long and 2-3.5 cm in diameter. The skin of the root is grayish-yellow, the flesh is white, and it secretes a milky juice when damaged. Salsify roots are eaten cooked like asparagus. Its young leaves are suitable for making salads. Sow seeds in rows 30 cm apart in April. Thin out overcrowded seedlings, leaving plants 5-10 cm apart. Salsify is more drought-resistant than scorzonera and is best grown in fertile, deeply cultivated soils.
