Kale sprouts are a rich source of vitamins A, C, K, iron, potassium, sodium, calcium, and carotenoids (β-carotene, lutein, zeaxanthin).
Sprouting seeds - green kale are particularly recommended:
They contain antibacterial substances that fight strains of Helicobacter pylori bacteria (increasing the risk of type B stomach inflammation) and stomach ulcers.
