A vegetable suitable for amateur cultivation, characterized by high nutritional and dietary value. The cylindrical storage roots are 25-30 cm long and 3-4 cm in diameter, straight with a black-brown skin. The flesh is white, sweet, and delicate. It can be prepared like asparagus or cauliflower, fried in batter, or used as a dried ingredient in soups. It overwinters in the ground under cover and can be stored in sand. The best quality roots are obtained by digging them up at the end of October and the beginning of November. Care should be taken not to damage the roots during digging, as the milky sap that leaks out can reduce their quality.
